Easy Grain-Free Granola

This is a straightforward but tasty granola recipe – I tend to adapt it depending on what I find in my cupboards.

Use the following as a base but feel free to substitute your favourite raw nuts and seeds:

Ingredients:

  • 2 handfuls/cups mixed nuts, roughly chopped

  • 2 handfuls/cups coconut flakes

  • 1 handful/cup sunflower seeds

  • 1 handful/cup pumpkin seeds

  • 1 tbsp chia seeds

  • 3 tbsp ground flaxseed/linseed

  • 2 tbsp maple syrup or honey

  • 4 tbsp extra virgin coconut oil

  • 1 tsp ground cinnamon

  • 1 tsp ground nutmeg

  • A pinch of sea salt

Prep time: 10 minutes

Cook time: 30 minutes

Heat oven to 150C/fan 130C/gas 2.

Line a large baking pan with parchment paper.

Mix the coconut, nuts, seed, spices and salt in a big bowl.

Melt the coconut oil and maple syrup or honey on a low heat.

Pour the coconut oil mixture over nuts and seeds.  Stir to coat.  Pour out onto the prepared baking sheet and spread out evenly.

Bake for 30 minutes, until golden brown. Leave it to cool completely in the pan before storing.

Serve with fresh or frozen berries, plant milk or yoghurt. Or just eat it straight from the tub!
